- First, make sure your salad is colorful - the darker and brighter the colors, the better. Dark-green spinach, for example, has much more nutritional value than iceberg lettuce. Lots of tomatoes, red and green bell peppers, beets, artichoke hearts, peas, corn, carrots and broccoli add much needed nutrients.
